Personal favorite:- Banana Pancakes:

1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed

Directions

Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
Stir flour mixture into banana mixture; batter will be slightly lumpy.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

I also like to add a pinch of cinnamon, and some vanilla essence tastes good served with Canadian maple syrup :)

AW MAN, I thought that this was gonna be a post on how to "cook-up" some kind of cool laser or something along those lines. But, after reading all the delicious sounding recipes, I have to admit that I don't feel that my time was wasted. FIRE UP THAT GRILL, SOMEBODY !!!!! rob

Anchovies and Spaghetti

OK I know anchovies are an acquired taste, but believe me this dish is delicious, and cheap. The preparation takes all the fishy taste from the anchovies, leaving a very savory flavor. Everyone who I told the recipe to turned their nose at it till they tasted it. Now they are all hooked LOL.

1 can of anchovies in oil. They sell 2 types, a flat, or rolled around capers. I use flat, but if you like capers it OK too.
2/3 box of pasta (spaghetti, linguine, ect)
1/4 cup olive oil
1 cup water
Fresh garlic
Optional...Parsley, Diced tomatoes, Chopped mushrooms.

Prep...

Put a gallon of salted water on to boil.
Mince half a bulb of fresh garlic and optional ingredients.

Time to cook!

Add the pasta to the boiling salted water.
Place the oil, and garlic in a sauce pan on medium heat. Keep stirring the garlic and oil till the garlic starts to brown on the edges, than add the anchovies. Keep cooking till the anchovies disintegrate, then add the water slowly. Bring to a boil and then turn down to low to simmer.

Drain pasta, throw it back into the pan it came from, and turn off the heat. Dump the sauce over the pasta and stir. This would be the time to throw in the optional ingredient. Let sit for 5 minutes, stirring every minute or so.

When serving throw on some ground black pepper, and grated cheese to your liking. Some people use a little lemon juice too at this point.

This is almost the exact recipe for linguine and clam sauce. Except you dont cook the clams to disintegration, and you use the clam juice from the can of clams instead of the water.

Beef Stew

Feeds 2-3

1lb Stew beef. I use sirloin tips, but chuck (not Norris) works well also. I'm sure lamb would be good too.
1 Carrot.
1 Celery stalk, or large pinch of celery seeds.
2 Medium potatoes.
1 Tbsp Soy sauce,
1 Pat of butter.
1 Pack dry pork gravy. I never liked the beef gravy flavors. *
2 Tbsp dehydrated onion. Or 1/4 real onion.
Dribble of oil.
Salt to taste. Sample after the stew is finished, and add as needed.

Time to cook!

Cube beef, carrots, celery, potatoes into 1 inch pieces.
Find a medium sauce pan and cover. Use a plate if you dont have a cover.
Place the pan on medium high heat and dribble a small amount of oil on the bottom. Once you see the oil start to smoke, drop pieces of beef in the pan one at a time. Cook for 2 minutes, then flip the beef cubes, and cook for another 2 minutes.
Slowly add water to the pan till it just covers the beef. Add soy sauce, a couple of grinds of black pepper, and the dry onions. Stir, and bring to a boil. Once boiling, place lid on pan, drop the temp to low, and let cook for 30 minutes.
After 30 minutes, take the cover off, add the vegetables and butter. Bring to a boil, replace cover, and cook for another 30 minutes.

Check the direction on the pouch for making the gravy. The one I use (McCormick Pork Gravy) makes a cup of gravy. So I put 1/8 cup of water in a cup, and add the whole bag of dry gravy, and mix. Its should be the consistency of white glue. If its thinner, that's OK. If its like paste, than just add a little more water. Make sure it complete mixed with no lumps.

Add gravy mixture to the stew while stirring, and bring back to a boil to thicken, stirring constantly. And that's it.

* If you used lamb, use the same gravy instructions, but use flour instead of a dry gravy mix. Add small amounts of the mixture to the stew to thicken. Less is better here.

How about a culinary masterpiece?

This was suppose to be a cheap, easy, but delicious, meals thread. A turducken is a big money item, and a pain in the ass to make.

I dont like most vegetables, just corn, potatoes, onions, garlic, and cooked tomatoes. I added carrots and celery to the stew because thats what my girl likes. I pick out the carrots and celery.

You can add what you want to all my recipes. That's the fun of cooking. Just dont put so much that it over powers the rest of the flavors. A good rule is that you can always add more, but you cant take away.

Quick Kofte Kebabs



500grms minced lamb
1/2 finely chopped onion
handfull fresh parsley
handfull fresh coriander (cilantro)
level teaspoon ground cumin
Salt

Mix all ingredients together in a bowl by hand (wash them first!)
Salt is added as preffered (I like salt:( )

I make mine up on cheap bamboo skewers but you can just make them up into small patties (like a beefburger)

Dont make them too big, you want to be able to grill them fast (high heat) and have them cooked in the middle.
Grilling them fast helps to keep them moist.

Now its time to let your imagination loose!

I like mine wrapped in a flat bread with a little chopped salad and chilli sauce.
You can use a split pitta bread, natural yoghurt, humous, Tzaziki, ketchup, relish...Etc.

BBQ them for best results.

Here's a simple salmon recipe I learned some time ago.

You can to this with any fish I suppose.

Take any fillet and with your choice of wine poor over the fish in a pan.

Use maybe 1 cup depending on size. You dont want to smother it. Just give it a nice coat and brush a little mayonnaise on the top.

Broil for about 30-45 mins or until browned on top and edges.

It will have such a nice flavor to it. Give it a try. And fish really isnt all that much expensive at least not where I am. I like to go to either Hannafords or in my area a Price chopper. They always have deals on shrimp and scallops.

nice thread... i have a good fresh recipe. i am an ameture chef. i am part of an online food group called ghetto gourmet. although my chapter is in turmoil right now.

my recipe is for a fresh ahi salad
1lb fresh ahi
cracked pepper
kosher salt
bag of mixed greens
ponzu sauce
sambal olek
grapefruit
jalapeno
sea weed salad (found at local asian market)
can of bamboo shoots (reg store asian aisle)
tomato
mango
cucumber
oil, (just for searing)

heat a thin layer of oil in a pan
take the whole ahi piece and crust it with the pepper and salt on both sides. then put on the hot oil for 1 minute on each side. that part is done

chop all veggies to your liking and mix in a bowl. now distribute to each indivdual bowl. then top that with the seaweed mix and thin slices of the seared ahi.

Sauce:
take a few ounces of the ponzu, a teaspoon of the sambal olek and 1 half of the grape fruit. add a table spoon of oil. whisk well.
add to the salad and enjoy.

Sorry I have not been updating the thread. It seemed to die, so I didnt think people were into it anymore.
