This lovely board code is probably overwriting other data everytime we reply to this...
 
What would be a good test load?
Another wierd thing is the voltage outputted changes when i put LED in and adjust the pot
 
Using a few rectifier diodes in series can work. The voltage changes don't really matter as long as the diode turns "on". After it's on, only the current really matters.
