If Sparkfun ever has their ding and dent boards available, you can buy some of those and use them. I bought about 100 pieces for $25 and they're pretty nice. Unfortunately, they seem to not make as many mistakes as before, and they're sold out.

Another thing you can try: buy a metal plate from eBay (I got this 12"x12"x0.5" plate for ~$40) and then hot-glue components down to the surface.

It sounds totally ghetto, but it actually works, and the objects REALLY stick to the surface enough that you need to use screwdrivers to pop them off depending on how much you use. It's a great way to prototype your permanent rigs and get the placement down, and works as a semi-permanent arrangement in a pinch. Plus, you'll have a nice heavy-duty aluminum plate to work with later should you decide to build the actual projector.
 
So was the intention to have a red/green overlap, or to have a red beam and green beam that were very close to one another and appear white? Wickedly cool in any case.
