I read that these cheeses were 'discovered' as the cheese ages-
Pubs-taverns ETC were willing to trade for drinks-eventually some pubs had more than they could sell=as time passed they got stinkier and some person was willing to STILL eat it-
this happened because they traded more that they could sell.
