what should be the output voltage of a dvd burner diode at 350 ma if i dont want to fry it?(using ddl driver and 5 aa battery)

It depends on what kind of diode you are using.

do you know if it is a 16x or 20x?

Dr Lava posted a consolidated graph with lots of different diodes - Hemlock Mike still has the best graphs though, no offense to Lava :)

red laser diodes take about 3v.

when you're using a fixed-current driver, the diode will take whatever voltage it needs, the driver will keep the current regulated to what you set it to... the voltage will just sort itself out.

With my short open can running at 350mA, it had 3.1v across it.

Seriously, do some reading. This question has been asked and answered a million times. Voltage doesn't matter, think CURRENT.
