I managed to come across a k3563 regulator with a heatsink on it. I was curious if this will work in a driver circuit like the lm317 or if anyone can tell me much more about it.

The K3563 is a MOSFET, not a complete regulator. A MOSFET together with an OpAmp and some other parts can be used as a very simple voltage regulator or current regulator, depending on the wiring. A LM317 has some other features like over load protection and consists of more parts than just a MOSFET or transistor alone. Download a datasheet for the LM317 and check the section with the schematic diagram. This will give you a better understanding of how complex a part it really is.
