I'm looking if anyone has any photos of insides of Optek (or any other manufacturer) optical parametric oscillator? I'm curious about specific tuning systems used in practice so any other references would be welcome too.

Yes, tuning over narrow ranges, especially with periodically poled crystals can be achieved with just etalon. But most vis-NIR OPOs have much wider tuning ranges and work on LBO/BBO, which can't be periodically poled. LBO can also be thermally tuned in some range, especially if it's NCPM but again, the range is small and tuning is extremely slow
