I used this to make the sounds:
GinSing - a synthesizer shield for the Arduino

It's pretty nice and has a 1/4 output jack. It depends on how much flexibility in sound you need - for a hobbyist like me it's great, I'm just happily using the built in sounds. If you really want full control over the sound it may not suffice at all. Or it may. I haven't plumbed it's depths. :)

Wow that's pretty cool, the tutorial i used used a midi jack but i couldnt get the serial communication with the keyboard to function properly. Does it sound really artificial or does it have realistic synth like sounds?

This is what I have it sounding like - though it's a bit soft, turn it up and you can hear it:

It can move that sound octaves up and down and it's really easy to code, so I'm there - I figured I could expand it later, one problem at a time. :)

I think it can do more, but I haven't tried yet. But it has a library that gives you quite a bit of control over the sounds it makes. Their web page has videos and demos of what it can do.

For my purposes, though, it's been stellar!
