If you use an iPhone or iPad 2 with GPS you can disable the geotagging (which I do unless I specifically want it) by going into
Settings -> General -> Location Services
and turning off apps you don't want recording GPS positions.
I don't know if an iPod touch or wifi iPad would use wifi triangulation to determine location as well but you can turn it off the same way.
