I've actually noticed the same thing.

I've also noticed that when its cold and not warmed up, the beam tends to (what it looks like) split into 2 separate parallel beams, that are really close to each other. Anyone else notice that?

This is called a mode switch. In some cases, a laser beam may switch TEM modes and "split." Wikipedia has some good information on it.

That usually poses the reverse problem: it will dim when it gets too warm, either from ambient temperatures or from running for a long period of time.

Personally, i prefer lasers with a temp optimum slightly above room temp (in the 25-30 C range), they will brighten a bit with run time without the very disappointing power plummet after running for a minute or so.
