This was the original objective of my collection, had to lower my expectations a bit after selling off all my lasers a few years ago. Gradually getting there again though. :D Below are all the wavelengths I could find in production pens. I believe all can be found in 5mW varieties. Not including engineering samples, experimental diodes, or limited/rare stuff. Only visible wavelengths. Not including wavelengths that are within the margin of error of another. (ie "445" could be 447, 444, etc...)

660
635
593.5
589
561*
532
520**
473
445
405

*Apparently exists, only one on the list I have yet to see anyone one the forum with in pen form. Incredibly expensive.

** Maybe not in 5mW, but certainly lower power pens

See edit, added links to above post. Couldn't find a 520 that was actually <5mW.

I found it was cheaper to go with slightly higher power rather than <5mW. In many cases the high quality 5mW cost way more that a medium quality ~30mW. I got a 660, 635, 532, 445, and 405 pen all for only ~$70 on eBay. Seller claimed 5mW, obviously higher in some cases lol. Either way, it saved $$$ for some of the very exotic wavelengths left to go. :D

Also thanks for pointing me to that 561 pen- i thought they could only put it in a PGL-III host

Yeah, I don't think there has ever been a review of the pen version 561 on this forum. :D See who can do the first review? :D

In addition to those already listed:

670nm
685nm
780nm
808nm
980nm

And lots of other red/IR wavelengths that I don't remember off the top of my head. For some reason there are far more diode choices on the longer side of the spectrum. Most of them are quite cheap, as well :)

Also note that diodes have a lot of variation. Those marked 445nm or 450nm might be anywhere from 435nm to 460nm. And it makes a lot of difference, color-wise.

Wow...I thought I was at least half way done with the 5mW pens. I guess not :(

You could also get 672. If you really want to go all out, go for 946, 1064, and 1342. :p

@Trevor-I am going to assume mantis shrimp can see IR, and you aren't just giving the most ridiculous advice I have ever heard ever for no reason

@Tmack-I will let you know- if i do decide to part ways with it. Not sure if I want to though! Even though I have no use for it :/

IIRC mantis shrimp have 20 something colour receptors or something like that, ranging from deep UV to IR.
