it depends what speed you're looking to slow it down to.... but just about any pot will work.

if you want to slow it down to an absolute stop you'll probably need about 500 megaohms... you can play with putting some resistors in there to gauge what speed range you'd like, though this really isn't something you need any sort of precision for... you just need the motors to be running at different speeds in relation to eachother, so any pot will work. I'm using a 10k pot in a spiro project I'm working on now.
Look around for broken stereos and such, potentiometers are super common and I'm sure you can scrounge something up for free pretty easily.

As I know the motors you are wanting to use I will check which will give a good speed range and get back to you.

They do small knobs for them as well.....I think ::)

*Edit...just reread and see that you have gone for computer fans... not the ones I thought you wanted...No idea of pot value then but the above style is the easiest to deal with.

Middle pin is the wiper, connect that to one of the outer ones and to the supply to the motor, the other outer connects to the motor.
