That's right,(I will be the 1st Sushi Chef to offer it) as soon as i get all the parts i ordered, No More butane torching sushi, "Strictly Laser Seared" from then on :lasergun:

Will you be preparing in front of customers?
If so, will you be providing safety glasses to the customers who want to watch?

Yeah a laser is no substitute for a torch. When using a laser to burn you'll have to focus it to a tiny point, and hold the laser still to get enough heat to cook the top of the fish. A torch will cover 20X+ the area the laser would at one time. I dont think its practical, and it can be dangerous for people surrounding the area you're working at.

You could simply get a cut piece of safety glass to put in front of the prep area where you are using the laser. Be much easier and cheaper than trying to provide an unknown number of customers with glasses, plus your customers wouldn't walk out with your safety equipment then :). Though I share the same concern as Tech_Junkie as I am not sure if that is actually a viable option, though certainly worth toying with the idea.

I was going to use a shiny champagne chiller cause of the depth i can light it up inside and I should get good lighting effect too. As for searing ability I would think at 1.6Watts the fish oughta sizzle. we'll see:beer:

You know.... even if it's not feasible to properly sear the Sushi, we are talking about Sushi after all and it is generally expected to be raw. Instead of trying to sear it in a similar fashion to the Torch, maybe do something completely different. Try searing in some sort of pattern or image just for asthetic purposes to make it different. I would expect a simple pattern should absolutely be doable with a laser and would still set you apart (maybe even more so).

I emjoy laser-lit cigarettes from time to time - i guess its possible with many foodstiffs - like laser creme-briulee :D

If one laser doesn't work, you could always position a bunch of lasers so they're all focused on the same spot, that could get a nearly unheard of energy density:D

It will sizzle, but only a small area at a time.

All the power to you. Just make sure you get proper goggle for a laser that powerful. Especially when pointing into something shinny. I use my 1.1W in the house sometimes, and its so bright it hurts the eye just off the beam refection on the wall. And thats not including the dot.

1.6W aint that much power... Not enough to sear tuna efficiently, at least.

To get the same effect as a torch, you can try 10W+.
At that point it becomes not only unsafe, but impractical and expensive.

Uhm ..... "backpack-mounted" style 40W CO2 laser with fiber optic coupling to the fingertips of the cook ?

Maybe not practical, but for sure impressive, for the clients ..... ;) :D

Cooked sushi?

Why not buy an engraver, let the customer pick a pattern, then put the whole plate inside. :D

Unless you're sporting an industrial-strength CO2 laser, in which case you won't even see the beam, the most you're going to get done on your sushi with these low powered diode lasers is cutting (burning) the seaweed.

Still, for effect, you could just pre-cut the rice and fish in your roll, wrap it up in seaweed and then cut the wrapping to make it look like you cut the entire roll. Buy enough goggles though.

@dnar Bummer man. Where I live they have great sushi. Even the 'all you can eat' places are great.
