A diffraction grating is going to make a pattern of dots, what you need is a custom made hologram. I have been thinking about doing this type of thing, arrange a bunch of ball bearings on a surface, expose a film (must be in the dark and held solidly as do the other imaging items , laser, mirror, spreading lens and beam splitter), to them illuminated by both the array and a reference beam, (spread beam that lights them up and the same beam split and sent straight to the film, the interference recorded on the film will be a large hologram of the pattern of dots the balls reflect, after developing, this can be cut into many very small pieces and each, when placed in front of a laser, will project those dots. If this is done in a good dark and solidly built framework, it may be a good hologram, and could have commercial applications such as you want. -Glenn
