Spicy Seared Sesame Tuna
(Sex Disclaimer - Cooking this dish for a date will get you laid)
Makes One Serving

1/4 lb Sushi Grade Tuna Filet
3 tbsp salted butter
1 tbsp sesame seed
2 tsp whole cumin seed
2 tsp salt
1 tsp garlic salt
1 tsp crushed red pepper
2 tsp ground pepper
2 tsp ashes/spicy rub (optional: dry wasabi powder, ground thai chili, ginger powder, & soy sauce)
1/2 cup dry white rice
1/8 cup fresh chopped cilantro
1 small lime
4 tbsp oilive oil

Place rice in pan and combine with fresh chopped cilantro, 1 1/2 tbsp butter, 1 tsp salt, and juice from 1/2 lime. Add 4/5 cup water and bring to boil while stirring. Reduce heat to soft boil, cover, and cook for 15 mins. While rice begins cooking, rinse fresh fish in warm water and dry surface of fish filet with towel. Combine cumin, sesame, ashes, salt, pepper, red pepper, and garlic. Lightly brush even coating of olive oil on entire fish and evenly coat all surfaces of fish with seasoning. Let seasoned fish sit until rice is finished cooking 15 minutes. Remove rice from heat to stand for 5 minutes and begin heating empty iron skillet over medium high heat (never heat an empty nonstick skillet). Once pan is hot, add remaining olive oil and butter. Spread cilantro-lime rice on a plate. Once oil is very hot and butter begins to brown, turn heat to high and add seasoned filet - sear for 15-30 seconds flip and sear opposite side for 15-30 seconds. Remove from heat and slice if desired. Lay fish over rice, squeeze 1/4 juice of lime over fish and garnish with remaining sliced lime. Serve with a white wine or pale lager. Warning: This fish is like 80% raw. The rawness is critical to the taste and texure. Use fresh sushi grade or Grade A tuna. If you can "smell" the raw fish, it's probably not that fresh.

I can only hope your post is ment sacrastic !!! Please have a look to WWF endangered species. Tuna fishing is a crime, nothing else. Tuna fishing always has bycatch (industrial fishing). Dolphines, Sharks and and and kicking the bucket. Please ask your self if you can survive without eating Tuna. Please give give these beautiful creatures a chance to stay on our Planet. PLEASE !!!

Tuna is delicious. Red Snapper and Grouper are even better.
Yellowfin tuna is extremely common in cuisine, especially asian.
I've even had some Dolphin fish before - it was OK too but a little light.
Shark steak is good too, but a lot more meaty.

No this post was not a joke. I thought I'd share a good recipe I worked out.
That is a mostly raw 1/2 pound slab of yellowfin tuna on the plate in that picture.
I turned it into poo. It was great.

To OP:

Can you recommend a substitute for the 1/8 cup of cilantro?

Ain't got no coriander up there?
Use some parsley, it looks almost the same, although the taste is not.

I've had tuna steak before, although not in this here fashion.
YUM YUM any way.

depending on your taste you could use dill or celery leaf. also anselm's idea of parsely is good to. very refreshing with rice.

GBD look in the ethnic section, and you might find dried cilantro on the shelf.

@ Chip. I didn't like ostrich omelette's, but the kangaroo I had was great.

Coriander is somewhat similar to cinaltro... That might be OK. Maybe 1-2 tbsp or so to replace all the cilantro. Corriander is actually dried cilantro seeds.

Cilantro is very common in the lettuce section (near fresh parsley sold in fist size bushels). In fact, it looks just like parsley except smells different. Buy a whole bushel and wrap up the unused cilantro into a ball with aluminum foil and freeze it. Mexican/ethnic section should have dried cilantro and it will be much cheaper. But because it's dried, only use about 2-3 tbsp.

you know... you could always just go to Chipotle and ask for a bowl full of thier rice. Chipotle rice is nearly identical to this rice, but uses less butter.
