I bet those sesame seeds give an amazing nutty flavour...

I like tuna, but i like it well cooked, your's looks rare.

It is rare! :) It is literally cooked only for 20 sec per side side to sear in the seasonings.
It's like a large slab of sushi.

TRIPLE POST!

If you want a slightly more asian taste use the optional seasonings listed (instead of the spicy fire/ashes rub) and then instead of brushing olive oil on the fish use some mix of soy sauce/honey/water (or use heavy teryaki). That will cause the sesame and seasonings to stick well and give a good asian influence. Same dish but totally different tase and spiciness with the swwet and soy and wasabi. The rice could be the same or an even simpler sticky-asian white rice.
