I just want to make sure I'm doing everything correctly so I don't kill my LED

First, pins 3-5 and 6-8 are the power cables correct? I group it 3 and 3 for + and - correct?

What's the nominal voltage I want to run this at? I see people say 5v, yet I see the datasheet say 2.7v or so.

I wanted to run it possibly on my 120v 30A variac as a test. This way I have a good voltage to start it on, in that 0-5v range.

What size resistor should I am for in ohms? I saw people said you can wind your own. I'll do this. But what ohms?

I apologize for making a new thread, I just want to make sure if stuff so I don't risk an LED. Plus threads like these help others.

Thanks.
